Most people have heard of the Paleo diet. Some call it a fad diet, some people think it's totally crazy, but to me, it is structure that is based around eating whole foods.

 For some reason, it is so much easier for me to follow a healthy way of eating by identifying with a type of diet. It takes all the, maybe, this one time, etc out of the mix and allows and easier and more automatic "NO" to the bad foods--sugar and alcohol being my two biggest weaknesses.

 It isn't about losing weight, or counting calories, it is simply that you just eat a TON of vegetables and fruits, a decent amount of meat, and some fats. It's about being healthy and strong. I know, I know, the whole needing a name for the way you eat isn't for everyone, but I am a creature best controlled by structure and habit and this one seems to work for me. 

I have been slowly changing over to Paleo since I've moved to Seoul and have found that the foods are more creative and fun and my health is consistently getting better. I have dramatically decreased my sugar intake and am starting a 30 day no alcohol challenge (imposed by myself).  So here goes, a new chapter in cooking and health!

Everyone knows the importance that a healthy diet has on the body and mind. The purpose of this blog is to share foods that I have prepared, recipe ideas, and recipes that have inspired me. Living in Korea has created many challenges to the way that I eat. Not only do you Koreans have many family-style meals that often involve far too much food, but they often have high salt and fat contents, a huge plate of white rice, and don't forget the beer on the side. So why not eat at home? Well, mostly I do cook at home now, but not without other challenges-----no oven, tiny space, expensive produce, and added sugar to almost every item.
Alas, after six months of residing in Cheongju, I have used imagination, a lot of internet research, and online food ordering to finally get a good rhythm and a diet that not only inspires my taste buds but  also inspires my creativity.
